Up Stream Salmon with Mango-Avocado Salsa

Why it rocks: Up Stream was built for salmon—sweet, spicy, lingering flavor without masking the fish.

Serves 4

  • 1½–2 lb salmon side, skin on

  • 2 Tbsp olive oil

  • 2 Tbsp Willy B’s Up Stream rub

  • Salsa: 1 diced mango, 1 diced avocado, ¼ cup minced red onion, juice of 1 lime, pinch salt

Level It Up!

  • 1 cedar plank, soaked 1 h

Directions
Pat salmon dry, coat with oil then Up Stream. Place on medium-indirect heat (≈ 375 °F). I put a water pan under on the rack under the salmon to keep moisture cooking through.

Cover grill; cook 15-20 min to 130-135 °F internal. Stir salsa ingredients while it cooks.

Level It Up!

Place the salmon on the soaked cedar plank then place over medium-indirect heat

Rest fish 5 min; serve with spoonfuls of salsa.
